What’s your best backyard BBQ recipe?

Summer’s in full swing and we’re firing up the grill more often. I’ve got the basics down, but I’m looking to shake things up a bit. Anyone have a go-to backyard BBQ recipe that always wins over the crowd? Could be burgers, skewers, marinades whatever you swear by. Bonus points if it pairs well with poolside chilling.
 
I’ve been making honey-lime chicken skewers for years and they never last more than a few minutes. I marinate the chicken in lime juice, honey, garlic, and a bit of smoked paprika overnight. Throw them on the grill and finish with a squeeze of lime super simple but the flavor pops. Perfect with a cold drink and some good tunes by the pool.
 
One of my go-tos is grilled pineapple and teriyaki beef skewers. I let the beef marinate overnight in soy sauce, ginger, garlic, and a little brown sugar. The sweet and smoky combo is always a hit and it’s even better with a cold drink and some sunshine by the pool.
 
One of my favorites is BBQ shrimp skewers with a chili-lime glaze. They cook fast, taste amazing, and go great with a cold drink by the pool. I usually serve them with grilled corn or pineapple on the side—always a crowd-pleaser!
 
I have a soft spot for grilled burgers, but with a twist: I mix ground beef with a little Worcestershire sauce, chopped jalapeños, and shredded cheddar right into the patties. When they hit the grill, the cheese melts inside, and the peppers give them a nice kick without being overwhelming.

Top it with a slice of avocado, and it’s poolside heaven. They disappear quickly every time I make them.

My go-to that never fails is grilled chicken thighs with a super simple citrus-garlic marinade. It’s forgiving on the grill, stays juicy, and people can eat it with one hand without making a mess, which matters more poolside than you think.

I marinate boneless thighs in olive oil, lemon juice, a little orange juice, lots of garlic, salt, pepper, and a pinch of smoked paprika. Nothing fancy. Let it sit a few hours if you can, overnight if you remember. On the grill, medium heat, lid down, flip once. When they’re almost done I’ll brush on a light honey glaze just to get that sticky edge. Pull them before they dry out and let them rest for a couple minutes.

What I like is it works hot or room temp, so people can grab a piece, sit, swim, come back, grab another. Pair it with grilled corn or pineapple and you’re set. Burgers are great, but they turn into a whole operation. This feels relaxed.

One random bonus tip from too many backyard cookouts, avoid super saucy or greasy stuff if the pool’s active. Once food and swimming overlap, hands get messy fast and everything ends up everywhere. I’ve learned to keep food simple and plan a quick pool reset later if it’s a big crowd. Clear water and easy food makes the whole day smoother.

Now I’m hungry. Anyone else notice thighs beat breasts every time on the grill, or is that just me?

One thing that’s become a staple for us is smash burgers on a flat top. Not thick pub burgers, but thin patties smashed hard so you get those crispy edges. I season the beef pretty simply, salt and pepper right before it hits the heat. Once it’s almost done I’ll throw on a slice of American cheese and let it melt into the crust.

The trick is the sauce. I mix mayo, a little Dijon, chopped pickles, splash of pickle juice, and smoked paprika. Nothing complicated, but it cuts through the richness. Toasted buns on the side of the griddle for like 30 seconds and you’re done. They cook fast so you’re not stuck flipping burgers while everyone else is in the pool.

I also like doing a tray of grilled veggie skewers at the same time. Zucchini, red onion, peppers, brushed with olive oil and a squeeze of lemon at the end. They hold up well even if they sit for a bit while people swim.
